SAMBAL BALACAN BRINJALS

Ingredients :

600 g brinjals, cut into halves
4 table-spoons fried onion with oil
Pounded sambal balacan
10 red chillies
6 chilli padi
40 g grill balacan
5 small lime juice

Method :

Boil water in wok, and add in 2 table-spoons of oil, before putting in the brinjals halves. Boil brinjals to soft. Remove and arrange brinjals on plate and sprinkle fried onion oil on top. Squeeze lime juice in sambal balacan and serve with brinjals.
