Crab in Black Bean Sauce

Get ready:
  • 5 crabs.
  • 1 medium onion.
  • 2 spring onions.
  • 1/2 cup vegetable oil.
  • 1/4 cup olive oil.
  • 1/2 red capsicum.
  • 1/2 green capsicum.
  • 3 teaspoons finely chopped salted black beans.
  • 1 teaspoon finely chopped garlic.
  • 1 teaspoon finely chopped ginger.
  • 1 teaspoon sugar.
  • 1 tablespoon light soy sauce.
  • 1/3 cup water.
  • 2 teaspoons cornflour.
Remove belly flap of each crab, prise off the top shell, and discard the soft grey entails.

Proceed to remove the claws. Next cut vegetables into strips and begin heating the vegetable oil in a wok. Cook crab pieces in the oil for about 3 minutes, and drain. Strain oil, and pour 2 tablespoons oil to wok and then stir-fry the black beans, garlic and ginger for about 45 seconds. Add sugar and vegetables and stir-fry for 2 minutes before adding the crab pieces. Mixing well the crab pieces, add the soy sauce and water and mixed with cornflour. Cook until sauce boils and thickens. Remove from heat and serve. Add a little olive oil if like.
